The assortment of Pécs sausages (as part of Lokodi premium products) stuffed in sheep casing is additive- and preservative free. The five different sausages stand for the “Five Towers” symbolising five districts of Pécs, and +1 is the reinvention of a now forgotten, freshly grilled sausage.
The assortment includes the following sausage products:
- Aranyhegy sausage – with fig and Cirfandli wine. The name had been mentioned as early as 1780 in the description of the city’s coat of arms in the letter proclaiming the free royal city status of Pécs. The distinct flavour of the sausage comes from two ingredients: fig that had grown in Pécs as early as the 1780s and the wine speciality of Pécs called Cirflandi.
- Csoronika sausage – with sun-dried tomato and basil. The geographical location of Pécs is suitable for growing both basil and tomato. The name ‘Csoronika’ is associated with black soil, evergreens, and other plants.
- Makár sausage – with chilli pepper and rosemary. The sausage was named after Colonel János Makár who had freed the castle of Pécs from Turkish occupation and after the naturally growing rosemary bushes in the area.
- Mecsek sausage – with lemon grass and ramson. The latter that naturally grows in Mecsek and Misina Mountain has been a part of the local gastronomy for a long time; however, it has not been a frequently used ingredient in ground meat. Lemon grass is highly reproductive in South Baranya County. Combining it with other spices is a culinary rarity.
- Rigóder sausage – with smoked ham, dark Pécs Beer, and sage. The stew containing smoked ham and fresh sage is a family recipe that inspired the sausage product – a flavour that harmonises with the excellent dark Pécs Beer.
+1 Pécs sausage – with roast veal and pork, marjoram, and parsley. The sausage is a reinvention of Swabian culinary traditions. The unique flavour of the sausage originating from the vicinity of Rác Mountain was achieved by adding grated lemon peel and by roasting the sausage in butter.
The making of these sausage products was inspired by ethnographic research and local patriotism inspired creativity.
In addition to Pécs souvenirs to be bought and tourist information to be learnt, making Pécs “edible” was another way of spreading the good reputation of Pécs in the world. The products have created unique street food only available in Pécs. The characteristic flavours of the sausages have a long gastro-cultural history in the region we can be proud of. The flavours of the sausages were carefully selected based on family, local, county, and regional history and on botanic features. In 2017, at the Local Flavours Contest organised by Pécs County Seat, the Assortment of Pécs Sausages won silver prize among 50 participants
